Introduction to Coffee Sommellerie: Understand, Taste, Explore
Dive into the fascinating world of specialty coffee through a workshop that blends approachable theory with sensory tasting. Together, we’ll explore the fundamentals of coffee sommellerie: how to taste, identify aromas, recognize a coffee’s origin, and understand what makes each coffee unique. This module is designed to lay solid foundations, whether you’re a passionate coffee lover or just starting to explore the subject. The goal? To demystify coffee and help you build real coffee culture.
What you’ll learn:
• Identify a coffee’s aromas like a sommelier
• Understand fermentations, post-harvest processes, and the major coffee supply chains
• Learn how to choose and buy good coffee, independently
This socially conscious module will also shed light on an industry that’s still too often lacking in integrity — yet undergoing a real revolution.
Get your beans ready… it’s grind time!
In this module, we’ll take the time to slow down, observe, smell, and taste. I’ll guide you through a comparative tasting to help you understand what it means when a coffee is described as “fruity,” “clean,” “spicy,” or “fermented.” You’ll learn to connect what you taste in the cup with what happened earlier — on the farm or at the washing station.
It’s also an opportunity to understand why some coffees are more expensive than others, what’s at stake for producers, and what “specialty coffee” truly means. By the end of this workshop, you’ll have the tools to read a label, ask the right questions to your roaster, and buy coffee with intention.

Its founder, Thomas Wyngaard, is an independent consultant, educator (certified by the Specialty Coffee Association from January 2018 to April 2021), coffee tour guide, and broadcaster. Trained in France, Poland, and Estonia, Thomas sharpened his skills with Belgium’s finest before spending nearly 2 years in New York as a trainer and advisor. Now back in Europe, he’s on a mission to help make the world a better place — one bean at a time.

Oui, une pause est prévue pendant l’atelier. Vous pouvez apporter de quoi manger sur place, ou profiter des snacks et boissons à proximité.
Oui, tout le matériel nécessaire aux ateliers est mis à disposition. Il y a aussi un syllabus qui est envoyé par e-mail après le cour. Vous n’avez rien à prévoir, sauf éventuellement de quoi noter si vous le souhaitez.
On boit très peu de café pendant l’atelier. Il s’agit surtout de dégustations techniques ☕️ Je conseille donc aux participant·es d’arriver un peu à l’avance et d’aller chercher un bon café aux alentours avant de commencer: Café Fontainas, Yuka, Kaffa Bar si le cours se donne à La Fruitière.
À la fin des quatre modules — Masterclasse découverte du café, Espresso & réglages moulin, Latte art débutant et Méthodes douces—, vous recevez une attestation de sensibilisation au métier de barista.
Je ne délivre plus de certification officielle de la Specialty Coffee Association depuis 2021. Pour conserver des tarifs accessibles à toutes et tous, j’ai choisi de proposer des cours basés sur une vraie méthodologie pro sans certification internationale, qui impliquerait des frais bien plus élevés
